  • Mushrooms: You can use any type of mushroom. We've opted for the classic button mushroom.
  • Mozzarella: For some people, the more the better. Are you one of them? We are! The quantity indicated in the recipe is an average, so feel free to add more or less to suit your preferences.
  • Pasta: For pasta, we use linguine because we find it elegant, but feel free to use other types of pasta, it will be very good too!

1. Cook the Linguine:

  • Boil the linguine in salted water according to the package instructions.
  • Drain the cooked pasta and set it aside.

2. Sauté the Onion:

  • In a large skillet, heat a drizzle of olive oil and the butter over medium heat.
  • Add the chopped onion and cook until it turns translucent.

3. Cook the Mushrooms:

  • Add the sliced mushrooms to the skillet and continue cooking until they become tender.

4. Add Flavorings and Cream:

  • Stir in the tomato paste, dried oregano, garlic powder, salt, pepper, and heavy cream.
  • Mix well until the sauce is hom*ogeneous.

5. Combine with Linguine:

  • Add the cooked linguine to the skillet along with ¼ cup of pasta water.
  • Toss the pasta in the creamy mushroom sauce until it's well coated.

6. Melt Mozzarella Cheese:

  • Add mozzarella cheese to the skillet and stir gently. Do this off the heat to avoid clumping.

7. Serve and Garnish:

  • Serve the dish while it's hot.
  • Optionally, top with more grated mozzarella if desired.
  • Garnish with fresh basil leaves.

Description

Here's a recipe that's perfect for fall, but can also be made year-round to suit your mood. This creamy mushroom and tomato pasta is easy and quick to prepare.

8 oz - 225g pasta, we used linguine

A drizzle of olive oil

1 oz - 25g butter

1 onion, chopped

7 oz - 200g mushrooms, sliced

2 tbsp - 28g tomato paste

1 tsp - 1g dried oregano

1 tsp - 1.5g garlic powder

1 tsp - 5g salt

1 tsp - 2.5g ground black pepper

1 cup - 240 ml heavy cream

¼ cup - 60 ml pasta water

1 cup - 225g Mozzarella cheese

Fresh basil leaves, for garnish

Instructions
