I am currently obsessed with smoothies! It’s been the easiest and quickest way to drink my meal on the go while packing in tons of nutrients in one glass. Do you find yourself rushing through breakfast or lunch, but need that boost of energy to keep you at the top of your game?

This raspberry apple smoothie recipe has got me going bananas! This creamy, cool and sparkly ruby-colored drink will make you instantly happy. If you can give yourself just 5 minutes for a refreshing beverage, this smoothie will help you get your day with a little hop in your step.

Have you ever spotted a rainbow in the sky that had you a bit mesmerized? Deep huh? Well, this colorful smoothie mix will have that effect on you. The best part is all of the nutritious ingredients added to your trusty blender.

To get the maximum benefit from each sip, I like to keep the apples whole with the skin on and just sliced up. This provides a balance of fiber and antioxidants that you might not get just from the juice alone. My blenderdoes an excellent job breaking the fibers down to a silky smooth consistency.

Raspberries are like tiny delicate edible gems. I love the enticing fuschia color it adds to the smoothie. These fruity beauties are a rich source of phytonutrients and are an excellent source of dietary fiber, vitamin C, and manganese.

To make this smoothie extra creamy, I added banana which not only is a good source of potassium, but it also has fibers called fructooligosaccharides (FOS) that are fermented by the good bacteria in your gut to aid in a healthy digestive system. If you haven’t noticed the trend yet, this raspberry apple smoothie is a nutrient ninja for digestive health!

Whenever my curious toddler hears the roar of the blender churning, he immediately stops what he’s doing to see what’s poppin’ in the kitchen. For this particular recipe, he gave me an “oh WOW!” I had to top off his sippy cup with a little smoothie of his own. He loved the sweet and tangy combo of raspberries, crisp apples, and naturally sweet bananas. He was very upset when he was “all done” and I tried to wash the cup and clean up his smoothie mustache.

How do you store and ripen bananas?

Bananas are harvested when green and ripen immediately once cut from the plant. There are five stages of ripeness; green, yellow with green tips, yellow, yellow with brown flecks and brown. As you’ve noticed, the riper the banana, the more sweet and creamy, but also the texture becomes softer. Bananas should be stored at room temperature. You can quickly ripen a more green banana overnightby putting it in a brown paper bag with an apple or tomato. The natural ethylene gas from the fruits in a closed container accelerates the ripening process. Never store green banana in the refrigerator, only yellow ripe bananas that you want to slow the ripening process. You can use the overripe bananas for banana breador muffins.I like to keep a bag of frozen bananas to add to my smoothies for that creamy texture.

Ingredients

  • ½ cup coconut water
  • 2 medium bananas
  • 2 cups apple, sliced, 1 large apple
  • 2 cups raspberries, frozen
  • ½ cup ice cubes

Instructions

  • Add all ingredients in a blender.

  • Blend for about 90 seconds or until the mixture is smooth.

  • Add more coconut water or ice cubes as needed to achieve a thicker consistency.

Notes

  • You can substitute the coconut water with any liquid you would like; almond milk, cashew milk, soy milk, water, orange juice.
  • Pick your favorite apple. I used half green and half fuji apples. The sweetness or tartness of the apple will slightly change how tangy the smoothie will be.
  • If you don’t have frozen raspberries, add 1 cup total ice, and adjust with more ice and liquid as needed to get the right consistency.
  • Recipe Yield: 3 ½cups
  • Serving Size: 1 ¾ cups (14 ounces)

    I actually made these as breakfast smoothies and they were amazing. I didn’t have frozen raspberries so I put some fresh in the freezer overnight. It worked perfectly. I love this smoothie! It’s like having dessert for breakfast. Yum
